2024. More From The Tightwad Gazette. Number 5

Here are some recipes courtesy of The Tightwad Gazette.

1.    Salad dressing can be expensive, especially when you compare them to the cost of the ingredients.  Here is an easy one to try if you want to save $$$ by making your own.

                                                                              Italian Vinaigrette

1/2 cup cider or red wine vinegar             1 1/2 cups Olive or vegetable oil.             2 garlic cloves, crushed

3/4 tsp salt.                        1/4 to 1/2 tsp pepper.                     1 Tbs  minced chives or parsley.

1 tsp dry mustard or 1 Tbs prepared mustard.                  1/2 tsp dried basil, oregano or mixed Italian herbs

Combine everything in a large jar with a tight fitting lid.  Shake well before using.  Makes a quart.  Also good as a marinade.

Google for other recipes you might want to try.

2.  Sometimes it is easy to modify a recipe to save money or to use what you have in the cupboard.

Have It Your Way Seafood Casserole

4-6 ounces of sale pasta, any shape you like or have.       More pasta means more or larger servings

1/2 cup mayonnaise , store brand works

1/2 cup milk or dry white wine.         The wine gives a very nice flavor and I like to use it but adds to $$$

1 can condensed cream soup.     I don’t use soup, I make a white sauce version of a celery soup. Less $$$

1 cup shredded cheese (4 oz).       I use mozzarella and Parmesan mixed but use what you have

1/2 tsp dry mustard or 1Tbs prepared mustard

6-8 ounces drained canned shrimp, crab or tuna     If we aren’t having company I use tuna, much cheaper

Crunchy topping       Buttered bread crumbs, crushed chips or slivered almonds   I use bread crumbs

Cook pasta and drain.  Combine ingredients through the must and mix well.  Add seafood and stir.  Transfer to baking dish.  Cover and bake at 350 for thirty minutes.  Uncover and top with crunchy topping.  Bake 5-10 minutes more.  Makes 6-8 servings

The last time I priced this out, using the less expensive choices cut the cost over half.

3.  This bread was called Cuban bread in the Tightwad Gazette.  I have no idea why.   But, I do know that it makes a good and quick loaf of bread.  You can double the recipe if you have a bigger family.

3 cups all purpose flour       1 Tbs yeast        1 Tbs sugar      1 Tbs salt         2 cups water (120-130 degrees)

I use my stand mixer for this but you can definitely make it by hand.  Mix the flour, yeast, sugar and salt.  Add the water and mix until the dough is well mixed and no longer sticky.   Kneed for about 5 minutes.Let the dough rest for 15-20 minutes.  Shape into a loaf.  I make a round one but you can make the more traditional loaf.   Cut an x into the top of a round loaf or two slashes into the loaf.  Place onto the middle rack of a COLD oven.  Place a pan of hot water on the bottom rack.  Turn the oven to 400 and bake 40-50 minutes until deep golden brown.   75 minutes from start to finish.  That is fast!

4.  This recipe is good to have in the refrigerator for quick bread products that can be done at the last minute.  If you get a little past it’s suggested life in your fridge just expect a sourdough taste.  Definitely not a problem.  This dough works great for dinner rolls, doughnuts, hot cross buns, and bread once it reaches the sourdough stage.

                                                               Potato Flakes Refrigerator Dough

1 Tbs yeast          3/4 cup warm water          1/3 cup sugar          3/4 tsp salt     1/3 cup oil

1 egg1 cup mashed potatoes from potato flakes      3-3.5 cups flour

Mic ingred in bowl of mixer and beat about 5 minutes.  Cover bowl tightly and refrigerate atleat 8 hours or until ready to use.   Let rise 1.5 hours before baking  in 400 degree ovenqq

The dough stays sweet for 5 days and sourdough for a further two days.

5.  I am not a fan of processed pudding mixes.  I prefer to make it from scratch.  I do it in the microwave.

                                                              Vanilla Pudding

1/2 cup sugar        3 Tbs corn starch       2 c whole milk          2 egg yolks        1 Tbs butter         1 T vanilla

Mix all the ingredients but the butter and vanilla well.  Cook in the microwave in two minute intervals, stirring between intervals, until thick.  Add butter and vanilla and mix well.   Let cool.

                                                             Chocolate Pudding

Add 6 Tbs cocoa.

                                                             Butterscotch Pudding

Use brown sugar instead of white sugar.

6.  I buy reduced bananas at 19cents/pound.  Logic says I need recipes for ripe bananas.  Here is one I use.

                                                                     Banana Toast

1 or 2 ripe bananas, smashed very well          2 eggs             1 tsp cinnamon            Bread

Mix the first three ingredients well.  Dip bread into mixture and cook in buttered pan.  Serve with maple syrup.

7.   Casseroles are frugal and a good way to use leftovers and bits and pieces.    Here is a guideline for creating a casserole from what you have.

1 cup main ingredient such as chicken, tuna, ham, hamburger, cooked legumes, ham

1 cup second ingredient such as mushrooms, peas, sweet peppers, diced tomatoes

2 cups starchy ingredient such as pasta, rice, potatoes

1 1/2 cups binder such as cream sauce, sour cream, canned soup, thickened broth

Seasoning such as herbs and spices

Topping ingredient such as crushed chips, cheese, bread crumbs

Thoroughly combine all but topping ingredients.  If too dry, add milk or stock to moisten.  Bake in a casserole dish at 350 for 30 minutes.  Add topping and cook for 15 minutes more.

8.  As I age I am trying to eat more whole grains.  That is made easier by using the following Universal Pilaf Recipe.

1 cup of uncooked grain such as rice, barley, bulgur, couscous

2 Tbs olive oil, vegetable oil, butter

Base vegetable such as garlic, onion, green onions

2 cups liquid such as broth or water

1/2 to 2/3 cups of protein such as chicken, tuna, beans, fish, shellfish, hamburger

Additional vegetables such as peas, carrots, corn, green peppers, celery, mushrooms

Seasoning of your choice

Heat fat in a large skillet and add the base vegetable.  Add the meat, grain and then liquid and bring to a boil.  Add the additional vegetables and seasoning and return to a boil.Simmer until all the liquid is absorbed.

2024 October Frugal Things

1.   I cooked up the bones from several turkey breasts and made broth.  I got two quarts of good broth.  Then I did a final look through the bones and got enough bits and pieces for a nice pot of soup.  Basically all free.

2.  We inventoried the cupboards and freezer so that we know what we have.  We will now base meals on leftovers we have.

3.    I made a large batch of cinnamon rolls (13) using refrigerator potato dough.   Cost was less than $2.

4.   We went to Canada for the Shaw Festival and paid for our hotel room with points.

5.   Now that we are out of the rv I have been baking more:  whole wheat bread, rye bread, English muffins, pizza crust, cinnamon raisin bread.  Each cost me less than a dollar to make.  Quite a savings.

2024 More From the Tightwad Gazette. Number 4

Some  more ideas from the Tightwad Gazette:

 1.  Fresh veggies in the winter for sandwiches, stir fry or salads can be grown easily and cheaply at home with water, seeds, and a jar.  Sprouts are easy to grow from most dried beans and some seeds, and they are quick and inexpensive to grow.  They are also very nutrition packed.  It’s easy to grow a wide variety if you have jars and a windowsill.  Google it.

2.  When running errands around lunch or dinner time, my husband and/or I might start to get hungry before we can get home.  To avoid a spur-of-the-moment meal out, we keep a small stash of snacks in the car ( crackers, nuts, fruit leather, breakfast bars) to tide us over.  This has saved us many a meal out and the resulting cost.

3.  A nearby grocery store publishes a get your flue vaccine shot from them and they  will give you a free groceries coupon.  Guess where we get our vaccinations.  Every dollar of free food helps the budget.

4.  Hair conditioner is essential for my longer hair but I keep the cost down by only using a pea sized amount that I work through my hair after I am done rinsing.  I then comb my hair, leaving the conditioner on my hair.  A bottle lasts a long time.  (16 months so far!)

5.  I cook a lot with dry beans because they are a very economical source of protein.  To speed the process I soak them overnight, drain and freeze in one cup quantities.  The soaking softens them and the freezing breaks the fibers.  So, when I am ready to use them they cook up super fast.

2024. From the Tightwad Gazette. Number3

 1.   Do sweat the small stuff.  Why?  They save so little, right?  But remember, there are more small ways to save money in your day to day life than there are big ways.  And, most of these small opportunities will reoccur and reoccur through the day, month, year.  Those individual small savings accumulate into larger savings.

2.   The search for inexpensive breakfasts can save a lot over time.  Here are some we rotate through on a regular basis:  oatmeal, pancakes, muffins, French toast, scones, toast and peanut butter, English muffins, cream of wheat, cinnamon rolls, bagels, raisin bread, cornbread, biscuits, cooked rice with cinnamon and sugar. If you learn to make these rather than buy them, you can feed yourself breakfast for well under a dollar, sometimes for pennies.

3.  If your grocery store has a scale, use it to weigh your produce before you buy it.  If the apples are being sold by the bag, use the scale to help you buy the biggest bag.  If cantaloupe is sold by the piece, buy the biggest you can get for the price set.   Your five pounds of potatoes could be 5.5. Pounds.  You get that half pound for free.  And a baked potato with broccoli and cheese sauce can make a great lunch or quick dinner.  Or, try them topped with chili and cheese.  Inexpensive and easy.

4.  Establish and maintain a well stocked pantry of items you have purchased at rock bottom prices.  And I mean rock bottom.  Shop sales, loss leaders, clearance , bent and dent stores, discount groceries and any other place you can find that will give you a good deal.  Try to never pay full price.  Don’t plan a menu and then shop.  Shopping is done to replenish your stockpile, you should not be buying ingredients for specific meals.  Shop first, menu second.  Determine the menu from what is in your stockpile of good deals.  You will save a fortune.

5.  Try to eat seasonally.  Tossed salad in the winter is expensive, and basically tasteless.  Build up a repertoire of salads that use cheaper and tastier ingredients.  Carrot salad with raisins, coleslaw, three bean salad, potato salad, Waldorf salad, broccoli salad, etc.  or skip the salad and serve two vegetables.  Nutrition doesn’t have to include a tossed salad.

2024 From the Tightwad Gazette. : Number 2

I learned a lot from the Tightwad Gazette that Still Works.  So I am sharing.

1.  Potatoes can be an inexpensive food.  But it depends on how you buy them.  I buy potatoes in a bag at the smallest price/ pound I can find.  A baked potato is one of the cheapest forms.  Mashed is also fairly cheap when you make them at home.  Fried, scalloped, augratin, and others made at home helps the budget.  Prepared mashed, scalloped augratin and such, not so much.  And the humble French frie, bought in the frozen food department, costs at least five times more than making them from scratch with a knife.

2.  When I peel potatoes, I make the peels a little thicker.  Then, for a different meal, I spray the peels with Pam and salt them.  Then I cook them in the oven until crispy.  A great side for sandwiches, pizza and more and made with something that you might throw out.

3.  I bake a lot.  To keep the cost down, I only buy flour at 99cents for a five  pound bag.  Sometimes I am lucky enough to find it at 50 cents a bag.  and I buy yeast by the pound for a very small fraction of the cost of the little packets.  Keep track of sales in the November/December time frame. Amish  Scratch and dent stores are also good sources.

4.  Coffee can be expensive.  And for me it’s a food group.   So we follow the system outlined in the Tightwad Gazette :  make your first pot as usual ; make the second by adding half the original amount on top of the first pot’s grounds.  The result is two pots of coffee  for 1 and 1/2 the grounds rather than 2.  If your coffee costs $5.12 per bag, by making it go further your cost ends up being $3.84.  Small savings add up.

5.  Keep your sugar and your baking soda near each other in the cupboard.  When you make pie filling, cobblers, fruit salads, and other items using fruit,  If you add 1/4 to 1/2 teaspoon of baking soda to the fruit, you can reduce the sugar by 1/2 and still get the desired sweetness.  The baking soda neutralizes the acid in the fruit.

2024 Frugal Things in August

1.  I purchased six birthday cards at Dollar Tree for $1 each.  They were Hallmark cards that would have cost much more at a normal store.

2.  I purchased a weekly/monthly planner and calendar for 2025 for $1.50 at Dollar Tree, much cheaper than other planners I checked out.

3.  We checked the cost of a new prescription between a local drug store and our mail order drugstore.  A couple of minutes saved us $21.

4.  I had to be at the Cleveland Clinic for an appointment at 8:00.  We stayed in their hotel free of charge using points.

5.  We used a $15 voucher at the yacht club for lunch.

6.  By searching the discounted tag items, I managed to buy 6 tops for about $12.  The original thrift store price for them was $33.

7.  We went salvage grocery shopping and found some great deals:  cereal for 80 cents a box, saltines for 50 cents a box, coffee at $3 a pound, cake mixes at 25 cents each, whole wheat flour for 99 cents for five pounds, dried beans for 79 cents a pound, almond butter for $1 a jar, soy sauce for 50 cents a jar, pad Thai sauce for 30 cents, mustard for 30 cents, evaporated milk for 30 cents, green beans for 25 cents a can, wax beans for 40 cents a can, peas for 40 cents a can, diced tomatoes for 30 cents a can, whole tomatoes for 39 cents a can, lasagna sheets for 89 cents, peanuts for 50 cents a pound  and more.  This really helps keep our grocery budget lower.

8.  We pay our dental bills directly from our checking account instead of using a credit card.  This saves us 3%.  that the dentist adds to our bill.  That can add up more quickly than you might expect.

2024. Money Saving From The Long Ago Tightwad Gazette Newsletter: Our First

I learned these ideas about thirty years ago and they are still saving me money.

1.  Regular brand or store brand popcorn kernels can save a lot of money.  Microwave popcorn is expensive and never gives you the amount of popcorn it says it will on the box.  Popping your inexpensive kernels in a saucepan with just a tad of oil gives you more popcorn, without the additives, and costs you less.  An easy win.  And it takes about the same amount of time.  We pop a batch about once a week, sometimes more.

2.  Your cold beverage of choice can save a fortune over time.  Soda pop is one of the most expensive.  Water out of the tap is cheapest.  I am not a water person, I know, I know.  So I make solar ice tea using two teabags that I bought on sale.  Gallon to gallon you save a lot :  Pennies vs dollars.

3.  My cupboard is stocked with dry milk and canned evaporated milk.  It is extremely rare to find milk in my fridge.  Granted, I don’t have kids at home any more, but I cook from scratch for every meal and I bake a lot .  When a recipe calls for milk I use dry milk.  Sometimes I mix it with water, sometimes with vegetable juices, etc.  if a recipe calls for half and half or whole milk, I use evaporated milk.   For cream I use evaporated and some melted butter.   I always have what I need and I don’t have to throw away a partial gallon of milk.    Money and time running to the store saved.

4.  I make my own bread but even if I bought it,  I would always be ready to make croutons or bread crumbs.  I have never bought them:  too many additives and too expensive.  If you have stale bread, make French toast or bread pudding.  Never toss.  It’s like throwing money away, a lot of money when you add it up.

5.  There are only two in our family now, but I still keep track of our groceries closely.  While I am sure others do better, I am content with the, on average, $35.30 per week to feed the two of us.  And we eat well.    How?  The biggest is by bulk buying.  When something is found at a very low price I stock up, sometimes buying several month’s worth .  Another big one is by not buying convenience foods:  pre chopped, small individual servings, basically not paying for things that I can do myself.  Buying marked down items such as fruits, vegetables and meats.  All my meat is either marked down to sell quickly, or a n holiday loss leader such as hams and turkeys.  Learn to cook low meat and no meat dishes.  Soups and stir fries and other ethnic meals work great .

2024. Frugal Things in July

 1.  I made sure to redeem my birthday gift from STARBUCKS for a free vente iced coffee.  It was wonderful in this heat.

2.  In the summer I do several salvage shops to stockpile for the year ahead.  I find great prices and save a fortune.  Some examples:  granola cereal for 25 cents, Hershey kisses for 20 cents, dried beans for 80 cents/ pound, dish detergent for $1, egg noodle for $1, flour tortillas for 40 cents, evaporated milk for 30 cents, stovetop stuffing for 40 cents, large crushed tomatoes for 30 cents, canned vegetables for 40 cents, refried beans for 20 cents, Starbucks coffee for $3.99.  Some items are not amazing but I can still save a lot of money.  Shop around.  Your regular store may not be your best store, even if it is only once a year that you shop there.

3.  I went thrift shopping and found a queen sized duvet and cover, white with lace, for $13.50!!!!  It will look so nice in my bedroom.

4.  A neighbor at a campground gave me a gift of lots of cucumbers from his garden.  I now have 39 jars of pickles to eat and give away.

5.  I took advantage of a half off sale at Starbucks to buy another iced latte.

2024 Frugal Things in June

 1.   Because I haven’t ordered in awhile, I received a $20 coupon from Chewy.  I used it and ordered $3 more to get free shipping.   We are now set for wet food for awhile at a nice discount.

2.  Mike and I did a salvage shop.  We bought coffee at $2.99 a bag, dry beans at 50 cents a pound, flour at 50cents for five pounds, whole wheat flour at 89 cents for five pounds, tortillas at 50 cents, mayo for fifty cents and better than bouillon at $1 a jar, to name a few of the best bargains.

3.  After our 20plus year old set bit the dust, we read an article rating sheets for price, quality and value.  Then we bought a new set of sheets on sale and used an additional 20%off one day coupon to make the price less scary.  The two strategies ended up saving us 50% off the original price.

4.  I bought 2#of thin sliced top round steak at 30% off, $6 /#.  That will make three meals for us with leftovers for lunch.  I see fajitas, Asian beef and a Philly cheesesteak in our future.

Frugal Fail:  Usually I bake our bread products.  With the temperature as high as it has been, I got lazy and went to Aldi.  I walked out with two loaves of bread, English muffins and bagels.  My wallet took a $9.84 hit!  I could have made them for about $2.00.  A definite fail.

2024 Frugal Things in May

 1.  Coming home from our travels, we stayed in two hotels.  We paid for both with credit card points.  We also made sure to take advantage of the free breakfast.

2.  In 3.75 hours I baked a loaf of artisan bread, a loaf of rustic rye bread, 8 bagels and 11 English muffins.  Total cost was around $3.00.  And, it made good use of the oven heat.

3.  We purchased 10 pounds of pork at $1.20/ pound to make breakfast and Italian sausage.  Much less expensive.

4.  I made 26 biscotti at a cost of approximately $1.  A cost savings of at least $25.

5.  Stale homemade bread was cut up, seasoned and baked into homemade croutons for salad.  The cost to make was literally pennies.

2024. Frugal Things in February

1.  I went to Ollie’s to get bird and cat food and used a 15%off coupon.  I saved $4.95.

2.  A local thrift store was having a sale on clothing:  50% off.  I went and got 3 sweaters, 1 light weight top, 2 pairs of slacks and 1 pair of pantyhose.  All were good brands.  I spent and saved $32.  Not bad.

3.  I received a 2 pound bag of dried cranberries through my buy nothing group.  Nobody else wanted them because they were past the best by date.  They are dried!  I saved about $14.

4.  I had a baking day and made Italian bread, English muffins and bagels.  Even buying the cheap ones I saved about $15.  And homemade tastes better.

2024 Frugal Things in January

 1.  I purchased boneless, skinless chicken breast to grind.  I will make sausage with some and use the rest instead of ground beef.  At $1.77/ pound the chicken is less expensive than what it is replacing.  Significantly.

2.  I have been using dry textured soy protein to stretch my ground meat.  When I make chili I usually use it exclusively.  Inexpensive protein.

3.  I used up some stale rolls by making a bread pudding dessert.  Yummy and frugal.

4.  I made homemade tortilla chips using some of my salvage purchased corn tortillas, 30 tortillas for 50 cents.  Each tortilla made six chips.

5.  I had enough Starbucks points for a specialty coffee.  About six dollars saved.

6.  Mike used his birthday certificate to almost completely cover the cost of our lunch.  $15 saved.

Frugal Fail:   I lost track of how old a loaf of homemade bread was.  It developed green spots and had to be thrown.  Food is only frugal when you actually eat it.

These are tiny frugal things, but over time they do add up.  They are like tax free extra income.

2023. Frugal Things in December

 1.   We spent three nights in DC in a hotel.  The cost was paid for by credit card points.  We saved hundreds!  Remember, we charge everything on our cards BUT you MUST pay the card off in full EVERY month or the points you earn aren’t really saving you money.

2.   We took advantage of seasonal sales to add to our stockpile.  Things like flour and pie crusts are at there lowest yearly price now so I stock up.

3.  We used $15 of our “free” Giant Eagle money to purchase items that were already on sale.  That made the money go even further.

4.  We had cucumber left over after the salad greens were gone.  I cut it into pieces and put it in some pickle juice.  In a few weeks we will have pickles instead of having to throw it away.  Win!

5.  Got 4quarts of beef broth and a garbage bag of yarn for free from my buy nothing group.

6.  My holiday meals were all put together using things from the freezer and my stockpile.  We ate like kings!  And I saved over 50% of what you might expect it to cost.  Just some preplanning can save a fortune!

Final Total:  $2513.06.   $8.21/day for two people.    $4.11/person/day

From last year we were up $1.43/day for two people.

Taking that number into consideration, I am upping the daily allocation from $11 to $13.

The Department of Agriculture, for their lowest food plan, suggests $19.26/day.  We will be under that recommendation by $6.26.  I can live with that.
