Meal Plan: September 1-15

Vegetarian: cheesy lasagna; ranch twice baked potatoes; spicy peanut noodles with Asian vegetables (2), homemade veggie burgers

Low Meat:  steak or grilled chicken salad; ham and pea pasta; English muffin pizzas

Meat:  ribs; orange beef; beef stroganoff

Totals:

Vegetarian  5

Low Meat. 3

I'm pleased with this two week period.

  1. Would you share the recipe for the asian peanut noodles/ veggies and the one for the homemade veggie burgers please?

    1. Veggie Burgers

      1 can beans, mashed, I use pinto or black
      1 cup cooked rice
      I grated carrot
      1 grated potato
      1 small onion, minced
      1 clove garlic, minced
      Salt and pepper
      Other seasonings as desired

      Mix well. Form into patties or meatloaf.


      Spicy Peanut Noodles With Asian Veggies

      Stir fry a mixture of favorite vegetables,season with ginger and soy sauce.
      Cook linguini.
      While cooking, mix peanut butter, hot water and cayenne. Mix until smooth. Stir in noodles. Serve over vegetables.
